The class will present the set of methods for measuring sensory perceptions (sight, hearing, smell, taste, touch), based on:
Sensory analysis databases: sensory physiology and psychology of perception
Sensory analysis tools: statistics
Sensory analysis methods: discriminative and descriptive techniques, sensory profiling techniques, consumer studies, preference mapping
The complementarity of physiology and neuroscience methods: electrodermal conductance, electrocardiogram, EEG, eye movements.
The practical work aims to give students the responsibility of a small study consisting in generating a sensory profile completed by the collection of data (eyetracking) and the writing of a report.
